How is it that I have not blogged about the Rockin’ Moroccan Bowl yet?

My newest favorite, this Native Foods dish is the perfect combination of “how did they do this?!?” faux meat & healthy home kitchen ingredients. The dish is more sweet than savory thanks to some fruity currants & the Native “chicken” [made from a combination of soy, wheat, & pea protein] is UNREAL!!! Meanwhile, the filling quinoa & healthy grilled veggies make my inner health coach proud.

Make Something Monday: A Lazy Girl’s Skinny Pasta

One of the greatest things about becoming more & more aware of the things you put in your mouth [insert snickering here], is getting to really understand what your body needs. It’s giving you signals every day about what you should and shouldn’t eat, but you may be too busy to notice.

Since going vegan, I’ve started picking up on a handful of my body’s signals and the knowledge it’s given me has drastically improved my existence. Dairy = acne. Sugar = lack of energy. And Gluten = food baby.

Today’s Make Something Monday is in honor of that last signal. While I am not highly allergic to gluten, consuming too much of it certainly does not make for a fun evening:
I feel fat, bloated, & usually awake the next morning with a stuffy nose & less than pleasant demeanor. So, whenever I can, I try to choose gluten-free options in order to allow for the occasional splurges when the occasion calls for them.

Enter: my first experience cooking brown rice pasta. Overall, a success!

I eat my pasta with chopsticks. See why at ** below.

Ingredients

1/3 – 1/2 package brown rice pasta spirals [I used Trader Joe's brand.]
3 – 4 garlic cloves, chopped
2 – 3 bell peppers, chopped [or, if you're lazy like I was tonight, 1 c frozen pepper strips*]
2 – 3 green onions, chopped
1 – 2 handfuls of spinach
red pepper flakes
himalayan sea salt
pepper
extra virgin olive oil for cooking [no measurements, but a few twirls should cover the pan]

For pasta:
Bring a pot of water to a boil & add pasta + a few turns of sea salt, if desired.
Test softness of pasta frequently. When desired texture has been reached, drain & rinse.

For veggies:
In a large skillet or wok, heat olive oil over low to medium heat.
Add garlic & cook until slightly browned.
Add peppers, onions, & seasoning to taste [salt, pepper, red pepper flakes].
*If using frozen vegetables, cook over heat until thawed.
Add spinach & cook until bright green & slightly soft, but not wilted.

Toss pasta in with veggies & serve topped with more pepper flakes &/or nutritional yeast.

**I have found that I have a problem with eating my food too fast. Not only is this bad for digestion, it is also bad for my waistline as it doesn’t allow my body to register when it’s full before I’m done. Because of this, I’ve started eating just about anything I can with chopsticks. It slows me down, looks cooler, & is just way more fun. I encourage you to play with your food as well!

Things have been crazy lately.
I almost forgot today was Friday.
And I haven’t done a Thankful Thursday or Make Something Monday post in weeks.

I promise they’re coming back. I need them to come back.
Baking & reminding myself of what makes me grateful week to week are not just entertaining for you [I hope], they’re very important to my well being.

Until then, I hope you will all hang in there with me & keep checking back for new posts.

I’ll soon get the hang of this whole student/health coach/burlesque dancer/girlfriend/blogger/waitress thing & figure out a real schedule for myself.

Sorry for my blogging absence this week, between visiting relatives, anniversary outings, & learning more and more about holistic health coaching, my days have been pretty full [not to mention my waitress by day/burlesque dancer by night duties].

Faux Fashion Friday: Back to the 80′s

As I mentioned earlier this week, Monday was the Omnivore’s 31st birthday! We celebrate in style by throwing a game night soirée in honor of his favorite decade: the 80′s.

There was Atari, Nintendo, Simon, and the oh-so-grown-up battleshots. More importantly, there was 80s style costuming.

Quick Bite: Chocolate Peanut Butter Batter Smoothie w/ a Hint of Green

Make Something Monday had to be put on hold to allow for time to prep & host the Omnivore’s 31st birthday party! 80′s fashions were donned, battleshot games were played, & delicious vegan thin mints were devoured…it was a fabulous success!

Here’s a quick bite recipe inspired by Oh She Glow’s Chocolate Cake Batter Smoothie
[I added just a hint of green for a hidden healthy boost!]:

Ingredients

1 frozen banana [or 1 1/2 for an even thicker, frosty-like smoothie...my new favorite]
1 small handful of baby spinach leaves
1/2-1 c So Delicious Coconut milk*
[*add an optional 1/3 c oats & soak in milk for 10 mins. for more protein & thickness]
1 tsp cinnamon
1 1/2 tsp vanilla
1 tbsp cacao powder
1 tsp agave nectar
1 tbsp peanut butter
1 tbsp chocolate chips [or cacao nibs for the raw version]
2 ice cubes [optional, depends on desired smoothie texture]

Place all ingredients in blender & process until smooth. Enjoy!

Faux Fashion Friday: Off the Shoulder + the Winner of a Stylish Surprise

As much as I love a good dress, the majority of my everyday wear involves a great pair of jeans. Back in high school, I would justify spending up to $100 for a good pair because they were an investment. Nowadays, I have bills to pay, but I’m lucky enough to have access to some great thrift stores like the Brown Elephant & Crossroads where I can find an awesome pair of jeans for under $20. My wallet is quite grateful.

But enough about denim, it’s time to announce the winners of a dress…
