Make Something Monday: Raw Pesto

Today’s make something Monday has saved me from many boring vegetable wraps this month by adding some much needed flavor.

From Going Raw, it’s a delicious pesto spread…now if only I could try it on some delicious multigrain pasta.

Raw Pesto Spread

lean, green, & ultimately delicious.

Ingredients

1 c fresh basil, packed
1/2 c raw pine nuts
1/4 c olive oil
1 clove of garlic
1 tsp lemon juice
a dash of sea salt

Place all ingredients in blender & process until smooth.  Serve on lettuce or spinach wraps with your choice of vegetables [I used red onions, orange bell peppers, & tomato slices]. Keep leftovers in a glass jar for up to 3 days.

Helpful Hint: Baby spinach leaves can be a bit small for wraps, but I was determined to use them. I ended up making a sort of spinach sandwich, placing another leaf on top of my creation before devouring it.  It worked quite well. Of course, lettuce wraps are always a bit messy anyway.
